Lamb Kofta Flatbread

INGREDIENTS :
For the lamb koftas:

400g lamb mince

1/2 red onion, diced

1 teaspoon cumin

1 teaspoon cayenne pepper

1/2 lemon’s zest

2 tablespoon mint, chopped finely

2 tablespoon parsley, chopped finely
For the tzatziki:
100ml yoghurt

50g cucumber slices, quartered

Salt & pepper

1/2 lemon’s juice

Handful of mint, finely chopped
For the salad:

100g Brussels sprouts

50g kale

1 teaspoon olive oil

1/2 lemon’s juice

1 teaspoon cayenne pepper
4 flatbreads
PREPARATION :


1. To make the lamb kofta sausages, mix the lamb mince, red onion, cumin, cayenne pepper, lemon zest, mint and parsley together in a large bowl. Shape them into 12 equally-sized sausages. Chill for 1 hour, then grill on high for 15 minutes.

2. To make the tzatziki, mix together the yoghurt, cucumber, salt, pepper, lemon juice and mint in a small bowl. Set aside.

3. To make the salad, boil some Brussels sprouts and kale for 5 minutes, then blanche in ice water straight away to keep them crunchy. Drain, then shred the Brussels sprouts and mix with the kale, olive oil, lemon juice and cayenne pepper.
