Pimm’s Ice Lollies

INGREDIENTS :
250g strawberries, halved

10 mint leaves

40ml Pimm’s

100ml lemonade

50g caster sugar

6 cucumber slices, quartered

Orange segments

Ice lolly moulds
PREPARATION :


1. Blend the strawberries and mint together, then strain into a jug/bowl to remove the solid bits.

2. Mix the strawberry mixture with lemonade, Pimm’s and sugar.

3. Place the cucumber and orange segments into the moulds, then divide the Pimm’s mixture between them.

4. Freeze until solid.
